Oslo: My favourite supermarkets

How about it, Mr. Rockford? Twenty thousand dollars can buy a lot of groceries.

I usually roam low price food retailers when shopping for staple foods as milk, flour and butter, but when I am looking for a treat, it is much trickier. Here are three of the more well stocked supermarkets where you may find fine foods, but be aware, you may have to pay up.

Centra Collosseum is named after Collouseum Cinema, the largest movie theatre in Northern Europe and the largest THX cinema in the world. It is distinguished by its large spherical dome. To get there take all westbound subway lines and leave at Majorstuen station. Centra is a five minute walk away.

It is maybe the best of all supermarkets of Oslo, very large, and with a surprising variety of different foods. If you are looking for something out of the ordinary, look at Centra Collosseum. If you do not find it there, you may have to go abroad.

You will find a large selection of fresh meats, fish, as well as frozen game, poultry, seafood, and much more.

Even very exclusive and/or exotic ingredients as alligator meat, antelope steaks and whole goose liver may be found in their freezers. They have an impressive selection of Norwegian and foreign cheese.

Last time I was there you could buy freshly made chorizos or salsiccias, Spanish and Italian sausages.

There are so much to discover in the well stocked shelves at Centra Collosseum, much more than can be mentioned here. This is a place to buy those ingredients that are not available at your local Kiwi, Rema, Mega or ICA supermarkets. But buy you staple foods there, as the price leval at Centra Collosseum is considerably higher than in regular budget supermarket.

Ultra Bryn is one of the best supermarkets in this chain. I have gone grocery shopping at Ultra Stovner, but the supermarket at Bryn is by far the best of the two.

Ultra is located in the eastern suburb of Brynseng, a five minute walk away from the Høyenhall subway station

They have an impressive supply of fresh fish, seafood, high quality cuts of meat and a large selection of ham, sausages, and other cured, smoked and salted products.

Last time I was there, there was a 40% discount on Salma salmon, a sushi quality salmon loin.

The range of specialties, and more eccentric ingredients is not as wide as at Centra, but it is by far better than those found in ordinary supermarkets.

This is definitely my favourite Asian food market. New and squeaky clean, filled up to capacity with interesting Asian specialties.

In the freezers you find a wide range of seafood in any size, from huge Asian prawns to neat small mussels frozen in their shells. You find fresh and frozen vegetables and fruits. What about frozen shitake mushrooms? Just grab a handfull and throw into your stir fry.

They have one of the best selections of Asian herbs as lime leaves, lemongrass, or oriental basil.

One of the most interesting things to buy are their frozen dim sum , separately frozen breaded prawns, different dumplings, crab rolls, fish balls, and much, much, more.

You can also buy seasonings for Thai, Philipino, Chinese, and other Asian cuisines. This is a place to visit, just to see the richness of these culinary traditions.

Chicken breast Cordon Bleu

This way to prepare chicken breast is superb. It is inspired by a classic schnitzel recipe of Swiss-Austrian origins. I expected three very hungry friends for dinner and I made a full dinner from 8 chicken breasts.

To feed 6-8 people you'll need:
8 chicken breasts (1200 grams / 3 lb's)
8 tbsp Dijon mustard
8 thick slices of hard cheese (Gruyère, Jarlsberg or Emmenthal)
8 slices of boiled ham
Bread crumbs

Make an incision into the breasts and fold out to increase the surface.

Flatten the breasts with a mallet. Place one tbsp of mustard on the flattened breast, then place first cheese then ham in the centre.

Fold over and shape into a roulade. Place in a large, oiled oven proof dish.

Mix bread crumbs, salt and pepper. I used pre made Shake'n Bake, that I bought in the US. Then sprinkle over the breasts.

Bake in a medium hot oven (175 C / 350F) for 40-50 minutes.

White asparagus in season

I went to Centra Majorstuen, my favourite supermarket yesterday. It was obvious that white asparagus were in season, as you could choose from fresh white Belgian sprouts in abundance for only NOK 19 per kilo (2,50 EUR).

I went in, as the original offer was NOK 99, i.e. 16 EUR, but discovered to my joy that the price had reached this ridiculously low level, because they had been supplied with too much. Norwegians may have discovered the joy of fresh asparagus just the last decade, but the delicious white variety is unknown to many.

I have indulged in white asparagus in Germany, lightly cooked in salted water, then served with Hollandaise sauce and cured ham.

To prepare them is easy. Cut off the lower part of the stalk, as this tends to be rather tough. Peel the asparagus 2/3 up. Bring lightly water in a steel casserole up to boiling point(this as aluminum casseroles will leave an unpleasant mineral taste on the asparagus). Leave the asparagus to boil for 8-10 minutes. Do not cool down in cold water, as this will make them watery and unpleasant.

Serve piping hot with butter or a tasty sauce, as main dish, or as a starter.

Enjoy Food & Travel spring break 2010

The Enjoy Food & Travel staff is trying to publish one new story every day. May 10th to May 17th we will take a well deserved break.

This spring break will be spent at our beautiful country home on the South Eastern coast of Norway, visited during most weekend from March to November. This place provides peace and inspiration to endure a busy life in the Norwegian capital.

Here we may work in the garden, sit down with a book, cook and go for a walk along secluded country roads. Enjoying the gentle art of doing as little as possible.

In this period you have to settle for a new story every second day. Here are however a few stories from my country home and area around it.

Breakfast sandwich à la Egg Benedict

My friend and Enjoy Food & Travel co-writer Susanne proudly announced that she had prepared a proper poached egg the other day. Sadly I have not succeeded in this art. Until I manage to do so, this breakfast sandwich is the closest I get to Eggs Benedict.

For two breakfast sandwiches à la Egg Benedict you'll need:

2 square bread rolls
2 eggs
2 cl Hollandaise sauce
Salt, pepper
2 slices boiled ham

Slice of the top off the bread rolls. Scoop out the soft interior of the roll. Take care not to make a hole in the bottom. Leave some bread on the sides and bottom. Squeeze the remaining soft bread creating a hard surface along sides and bottom.

Place ham, then pour Hollandaise sauce the bottom of rolls. Crack an egg and place on top. Season with salt and pepper.

Place in a medium oven (150C / 275F) for 20 - 30 minutes.

To be enjoyed piping hot.
