Chicken breast Cordon Bleu

This way to prepare chicken breast is superb. It is inspired by a classic schnitzel recipe of Swiss-Austrian origins. I expected three very hungry friends for dinner and I made a full dinner from 8 chicken breasts.

To feed 6-8 people you'll need:
8 chicken breasts (1200 grams / 3 lb's)
8 tbsp Dijon mustard
8 thick slices of hard cheese (Gruyère, Jarlsberg or Emmenthal)
8 slices of boiled ham
Bread crumbs

Make an incision into the breasts and fold out to increase the surface.

Flatten the breasts with a mallet. Place one tbsp of mustard on the flattened breast, then place first cheese then ham in the centre.

Fold over and shape into a roulade. Place in a large, oiled oven proof dish.

Mix bread crumbs, salt and pepper. I used pre made Shake'n Bake, that I bought in the US. Then sprinkle over the breasts.

Bake in a medium hot oven (175 C / 350F) for 40-50 minutes.
